If you’ve always wondered who inspired the vegetarian items on the Lime Fresh Mexican Grill menu, there could only be one answer- Lime Fresh Mexican Grill’sĀ® Chief Operating Officer (Donald) John Tims.
As a more than 10-year restaurant veteran, John has been with Kunkel from the start of Taste Bakery Cafe, and couldn’t resist the opportunity to help him open his current concept, Lime Fresh Mexican GrillĀ®, in South Beach in 2004.
Like Kunkel, John also originally had different plans for himself. Although he has a background in material science engineering from Georgia Tech, John kept finding himself drawn to the restaurant industry. Perhaps it was coincidence that his knowledge from Georgia Tech came in handy with all of Lime’s design and operations aspects, but we know it was fate. John’s hands-on approach to management and tireless commitment to Lime sets the bar for his operators, as well as competitors, and he wouldn’t have it any other way.
