As a more than 10-year restaurant veteran, John (Tims) has been with John (Kunkel- keep up) from the start of their first restaurant concept, Taste Bakery Café and was “all in” to help him open his current concept, Lime Fresh Mexican Grill®, in South Beach in 2004.
Like Kunkel, John Tims also originally had different plans for himself and pursued his material science engineering at Georgia Tech. Lucky for us, he found himself drawn to the restaurant industry — and even got to put some of that Georgia Tech know-how (and tuition dollars) to good use overseeing Lime’s design and operations aspects.
Another unique aspect Tims brought to the table? His no-meat mantra which inspired Lime’s Vegetarian-friendly menu and practices.
John’s hands-on approach to management and tireless commitment to Lime sets the bar for his operators, as well as competitors, and he (and we) wouldn’t have it any other way.
