It All Started As a Few Penciled Sketches

In 2004, our fearless leader John Kunkel mapped out his fresh Mexican concept with pencil sketches on the wall and hand-scribed notes on his desk. His vision was to complement the vibrant and food-conscious culture of South Beach with re-invented Mexican. The reality was Lime Fresh Mexican Grill®.

 

This healthier and refreshingly fresh alternative to Mexican quickly became a local epicenter, with lines of beautiful (and hungry) people snaking down South Beach’s famed Alton Road for a taste of Lime.

 

Demand created a strategic expansion that continues to grow and surpass the expectations of said fearless leader and all involved. But, no matter how big this little burrito shop from South Beach grows, Lime maintains its neighborhood appeal. This includes an outgoing staff who remember regulars and welcome newcomers, produce delivered and prepared on-site, daily and an emphasis on involvement in the local community of every new location Lime reaches.

 

Lime truly set, and continues to elevate, the industry standard for the fast-casual segment. John Kunkel remains deeply involved and committed to his vision realized, and has moved from pencil sketching on walls and desks to tweeting as #LimeCEO.
